Pan Seared Haddock with Summer Salsa

PAN SEARED HADDOCK WITH SUMMER SALSA
5 oz pc boneless haddock- dusted, pan fried
2 oz carrots cooked
2 pc asparagus
1 pc grilled red pepper
5 oz Rice Pilaf – (diced bell pepper, sesame oil, butter).
SALSA (SMALL DICE) ENOUGH FOR A FEW SERVINGS.
English cuke (seeded) 1 tbsp.
Roma tomato ( seeded) 1 tbsp.
Blueberry fresh 1 Tbsp.
Fresh ginger (grated) .5 tsp
Red wine vinegar 1 tbsp.
honey 1 tbsp.
Fresh dill or cilantro 1 tsp
Salt & pepper pinch
Mix all together well. Spoon on top.
