Chef Richard Sanford to pair fresh flavours with home-grown comfort

A proud Nova Scotian, Chef Richard grew up just outside of Halifax and brings over 20 years of experience in the local restaurant industry—most recently at one of the city’s best known golf courses. “My passion for food began at a young age,” he says. “I always loved having good food and took a deep interest in how it was made.” That culinary curiosity landed him a rewarding career doing exactly what he loves.
Chef Richard’s journey has taken him beyond the Maritimes, spending several years living in Scotland and traveling extensively across Europe. “Experiencing a wide variety of food, history, and culture has been a major influence when creating my recipes and menus,” he shares.
Even with his experience abroad, Chef Richard says his greatest inspiration is rooted close to home—his family. “Some of my fondest memories are of steamed mussels and lobster in St. Margaret’s Bay, or roast beef and mashed potatoes in the farmhouse kitchen, complete with vegetables pulled fresh from the garden.”
Leading a talented brigade of cooks, Chef Richard is excited to design menus, daily specials, and bring the culinary vision to life in a stunning new space. “The Canopy restaurant is absolutely beautiful—it’s a special place to dine,” he says. “I’m excited to create dishes residents love, while inspiring the entire team to deliver a premium dining experience, seven days a week.”
