A Taste of Home

Parkland is a place where you can gather with friends, taste delicious cuisine and enjoy exceptional amenities and service. You can do more of what you love in the privacy of your apartment or in the company of new friends. The holiday season is a time where you spend time with those you love with celebration, spreading joy and carrying on long-standing traditions. Few traditions are as special as digging out a box full of vanilla-stained recipe cards to create savoury or sweet additions to a meal or festive gathering.

Many residents and team members at our Parkland locations in Nova Scotia, New Brunswick and Ontario continue to share their holiday favourites with neighbours and family—and this year, they’re excited to share them with you! Short Bread Cookies

“I loved this recipe and made it every year. It came from a woman from Newfoundland and our kids loved eating them. I would start my Christmas baking in November and freeze them for the holidays. Our kids would sneak them out of the freezer one at a time.”

Bedstemor’s Danish Kringle

“These cookies have been a delicacy in Denmark for many decades. I have fond memories of my mother making these cookies every year for Christmas. Since I am descended from Danish parents, I have carried on with this tradition. The true meaning of ‘Bedstemor’ means ‘Grandmother’.”

Dark Fruit Cake

“This is a very old recipe. It was my mothers-in-law. She was a fantastic cook and a wonderful mother-in-law. I have been making this fruitcake for over 61 years every Christmas.”

Asian Chicken Salad

Banana Bread

“This is an award-winning banana bread and a family favourite! Over the holidays, I would bake one for each of her children and friends. I even entered a baking contest with this recipe and won first prize for best banana bread, winning a rolling pin with my name engraved on it.

Chocolate Mint Fudge

“It all started 10-15 years ago in Pictou Landing when my wife Jessie and I wanted to show retail workers that we appreciated them. Jessie started making chocolate mint fudge and we handed it out each time we shopped. It grew from that and we started giving it to nurses, dentists, doctors and garage mechanics. Jessie eventually became known in the community as “The Fudge Lady”. Once she got sick, I continued the tradition for her. Now, I make the fudge for people here at Parkland at the Lakes.”

Chrusty Favorki

“I chose this recipe because it was my children’s favourite treat during the holidays. I came to Canada in 1966 from Poland. I first started baking and cooking in Poland, where I self-taught through reading newspapers and cookbooks. After moving to Canada, I continued to bake and perfected my recipes by following cookbooks and learning from friends and family and would often take what I liked from recipes and make my own creations.
